Great saute pan!
A great pan at a great priceThe chief reason for the great price is due to the construction. This is known as a "disk bottom" pan because it has a highly conductive aluminum disk embedded in its base. The really expensive brands feature "cladding", where a layer of conductive metal (usually aluminum) is embedded throughout the entire pan. Although the cookware industry loves to say that disk-bottom pans are inferior, test after test proves this claim is untrue. After all, we don't cook on the sides of a pan; we only cook on the bottom. See Cook's Illustrated magazine, May/June 2003, for a great discussion of this.
There are a few reasons why this pan might not be right for you. This pan's size makes it fairly heavy, so if you have arthritis or weak hands, you might want to opt for a smaller pan. Similarly, this pan might not fit on those tiny stovetops or ranges that you sometimes see in "galley" kitchens in apartments. Great for soups
I cook for a living...Believe it or not we use some Le Creuset at work and because of the performance quality I bought this particular Dutch oven for my home. I love it. It is so very versatile... I can make soups, stocks, sauces and braise on the stove top or sear and roast meats or birds in my oven (the lid handle is good up to 500 degrees) and it makes a wonderfull rice pot. This is a good size for making a gallon of anything for two to twelve people. I have professional copper cookware at home so my choices of color were limited to "flame" or this...I like the contrast.
Although pricey and heavy (for the "home" cook ;-) you can't go wrong with this piece and the "granite" matches almost any decor. I liked this one so much that I bought an oval 6+ qt. also.
This will be a lifetime investment for you...enjoy

A daily workhorseCouple this with Scanpan's 3.25-qt stock pot, which is a highly useful, very-high-quality, easy-to-handle multi-use pot (including boiling pasta for 1 or 2 people), and you've got a great glass lid that fits perfectly on this omelet pan.
