All-Clad Stainless 3-Quart Saucepan - My Favorite Pan!Also, if you should get something stuck to the stainless steel use a product called "Bar Keepers Friend" to clean it. Most supermarkets have it and Kitchen Etc. and Bed, Bath and Beyond carry it too. The container (like a Comet can) is gold with blue and white writing. All Clad recommends it for cleaning stainless steel and it works like a dream and is very inexpensive.
Top of the line cookwareAll-Clad is the heir apparent to the position of "creme de la creme" among cookware. The inner layer of metal is aluminum to evenly conduct heat throughout the pan. The cooking surface is stainless steel, the ideal surface because it is non-reactive, easy cleaning, and more durable than nonstick compounds. A life-saver at Thanksgiving and ChristmasAt first I was afraid to use a surface that was not non-stick- for many years my specialty was macaroni and cheese (usually overcooked). But recently the cooking bug has hit me, so I purchased this roasting rack at the recommendation of my dad, who has a set of the professional hard-anodized.
All I can say is, I'm a convert! The price tag may be a little high, but given how much I would have spent over the years, continually buying the 5-dollar foil roasters, this will pay for itself in a few years, yet last a lifetime.
One of the best features of this roaster is the non-stick rack. I didn't want to use the non-stick roaster due to how high-maintenance non-stick is... rather heat-sensitive, the need to use care with which cleaners and utensils you use, etc.; but I also didn't relish the idea of scrubbing a regular rack. This was a breeze to clean, and the turkey came out beautifully. The large size of the pan made it easier to reach the juices, so basting was much easier.
If you really prefer non-stick products, try the non-stick Calphalon roaster. But for me, this was a great purchase. I highly suggest you buy this roaster. You won't regret it!
What Is Gravy, That Thou Art Mindful of It?May I suggest putting one carrot, one onion, and one stalk of celery in the bottom of the pan before you put your roast in the oven? I call this The Trinity, and it lends an incredible flavor to any drippings with an ambition to become gravy that they'll remember.

Lodge at AmazonAmazon has a great selection of Lodge products at great prices, but be prepared for a long wait and DON"T change the order.
Huge! Durable, and works fantastic.Lodge does require seasoning, and a little different care. It is easy to season, and the care is pretty easy. The pan doesn't stick, and works very well. Very impressive and works far better than pans that I paid many times more than what I paid for this one. If your tired of buying pans that you have to replace every few years, handle with kid gloves, and could possibly even be dangerous to your family then look at the Lodge. I bought one pan and loved it, and now have added and are adding more. I won't look back. This stuff is the best and I will be buying more.

a classic for a reasonEven heating and indestructability are what defines cast iron dutch ovens. Lodge is THE name in cast iron. If you have a campfire and want to cook anything besides a hotdog or marshmellow this is the way to do it.
Cast iron is prone to rust. So if you are camping in the rain expect a little orange. It comes off easily enough with a little scrubbing or some steel wool, but it is the major downside to cast iron. Oiling it helps reduce rust, but if it gets a lot of contact with water it will rust anyway.
Cast iron is heavy. Count this out if you are backpacking. I have no idea how much this weighs, but I am sure it is too much. Also if you are using one of those cute little backpacking stoves this is way to heavy to balance on them.
Overall I love to use cast iron whenever I can, but sometimes you just can't.

Nice pan, but smallIt is too small to be useful for much larger jobs.
Allclad stainless sticks to things like crazy, so it is a no-no if you want a pan to use for cooking eggs, pancakes, or the occasional hash-brown in.... but that same quality makes it absolutely wonderful for making sauces out of pan drippings.

Great Products!If I have read correctly, Meyer will replace broken glass lids that come with some of their other products if the ring (and knob?) are returned to them. This fact makes me feel a lot better about the lids and even more positive about the company.
I like the bakelite knobs and handles; they do not require potholders for stovetop use.... However, they are limited to 350 degrees in the oven.
