the perfect pan for many uses
Tatin, quiche, beef pot pie, or tamale pie - perfect pan....My first experiment, however, was a beef pot pie -- just browned the meat and onions in a bit of olive oil then added carrots and seasonings. A ready-made pie crust fits perfectly to line the pan, then a half-inch of stiff mashed potatoes with a little cheese sprinkled on top. The juices are sealed in and the crust browns beautifully at 350f.
Try it for a breakfast cassarole of pre-boiled potatoe slices, sauteed onions and peppers, grated swiss cheese, mushrooms, tomatoes, and quartered sausage links baked in a seasoned egg/milk blend to hold it together. When you bake it slow and let the flavors develope, the result is a country breakfast fit for the hungriest crowd.

A Staple Cookware Item of Any True Cook
A must have!
Wonderful and Versatile!This fryer is going to last forever. Its care is easy: I scrub it with hot water only, and dry it with an old rag and apply a thin layer of vegetable oil while the iron is still hot... a year and a half later, it's still rust-free and delivering the reliable service I have come to expect and admire. No scratches interfere with its performance, as is the case with my allegedly-long-lasting Wearever nonstick cookware set (what a waste of money THAT was!). In fact, in this particular chicken fryer, I've produced everything from french fries to spaghetti sauce to eggs and bacon to french toast! It's a dependable griddle, skillet, grill, and pot, and it goes right from the stovetop and into the oven for maximum versatility.
The best thing about the chicken fryer is its somewhat smaller circumference than the skillet or the Dutch oven. It takes up a bit less stovetop space and provides greater depth, making it ideal for small batches of soups, stews, or deep-fried goodies.
I am an avid home-chef, and I can say without exception that my cast-iron cookware is the best kitchen investment I've ever made.

Use this pan constantly"phase" has passed, and I still use this pan at least twice a week, if not more! I cook turkeys and capons in it on the oven, and then use the drippings to make gravy on the stove. Great for sautéing and searing. Also makes wonderful paellas. I've had it for two years now and it shows no signs of wear. Keep in mind, though, this is not for non-fat cooking, as you need some kind of fat to start with.

Griddle is as described in orter reviews -one note-
Great griddle
A perfect griddleOne thing, though -- the non-stick surface is *really* non stick. Make an omlette and it'll spread over just about the whole bottom of the pan in no-time-flat -- which is just great, so long as you like really thin omlettes. Over-easy eggs can be a bit tricky because it's so slippery -- it's not that easy to get the spatula underneath! (Part of that's because plastic and coated spatulas are thicker than metal ones.) One time I almost pushed an egg right off the griddle and onto the stovetop. But anyone who's ever had something stick to a griddle will not complain that nothing can stick.
Cleanup is strange. It just doesn't get dirty. I've only had this awhile, but I've used it twenty times, and the nonstick is not only still in perfect condition, it doesn't even show the "bright spots" that, with high-quality non-stick cookware, indicates some mechanical burnishing. I think this will last forever.


Chicken Fajitas...MmmmA word of caution: the sizzler is going to be hot. I know most people know that, but just in case. :c)
My only suggestion is to let the sizzler soak in some warm, soapy water so you don't have to scrub it.

Great pan!
Very pleased with this...comparitive shopped for about a month and chose the Cuisinart
9 1/2 in. I couldn't be more pleased with it's performance.
It is as beautiful as it is functional, and cleans easily
with a plastic scour pad in spite of the baked on cheese.
The clad bottom is an extra plus in my electric oven, most
bakeware overheats from the bottom coil at any height, but
with this pan I can bake under 400 degrees with uniform results.
The seal on the lid is quite impressive, I recommend highly
that you offset the lid immediately after removing it from
the oven.
