Rolled and stamped but holds a super edge
This sensible design has in fact been available from other (Japanese) makers for YEARS. The thin, light, fully taper ground blades make our set almost effortless to use, and the good alloy keeps a shaving sharp edge with only light honing on a ceramic block (unless the knives are incompetently used as in chopping frozen meats by hammering on the blade with a mallet).

Nice set
I bought this set about 3 years ago from the Farberware Outlet store Long Island NY. I remodeled my kitchen with oak cabinets and sand stone finish counter so the wood went better than the black series. I found by accident while washing a knife that they are very sharp. It slipped out of my hand and really just bounced on my other hand but that was enough to slice it. For being a straight handle the are quite nice to hold and work with. You can't put them in the dishwasher cause of the wood handles and I was told no knife should go into the dishwasher or sit in water cause they will get surface rust form the carbon used to strengthen the stainless steal. Dishwasher safe knives rally only apples to the handles.

farberware cutlery
The millennium series is a set of great quality knives! They are heaver than the professional series, but otherwise similar. The set does not come with a carving knife or cleaver, but is a good deal for the money. Although they are dishwasher safe, I would hand wash.

Great "budget" knives
These are probably one of the best "budget" knives around. The handles are synthetic so they're dishwasher-safe. There is no need for handwashing like expensive knives. The blades are strong, hold an edge well and has nice weight and balance for something so inexpensive. These are terrific for everyday, heavy use. A set you can abuse without guilt or worry. The "Farberware Professional" logo tends to wash off in the dishwasher.

Best present so far
I received this blade for Christmas '03, and fell in love immediately.

It has a beautiful feel, weighted perfectly, a subtle convex (rounded) edge that rolls nicely over herbs. The handle is easy to hold, it melts into your palm, with a notch for your index finger that's just as comfortable. The blade keeps its edge very well; much, much better than my other brand name carver. I bought a sharpening stone to keep the edge up, and I'd use that about once a week.

Think I'll be looking for more pieces in this range now, after using this one so much since Dec.

Fabulous
This knife takes some getting used to - initially it seems too long, too wide, and too flimsy. But now, after using this knife for almost a year, it is my favorite. The Furi hold an edge well and is infinitely easier to use that either a German cooks knife or a Chinese cleaver. Fast. Easy to clean. Easy to sharpen. Highly Recommended.

Can go from kitchen to garden and back, over & over!
Among my assorted bird's beak paring knives, this one has a special place. There's no hiding place for any transfer of salmonella bacteria from poultry to produce, for this knife is made of a single piece of steel, and the solid handle has good weight. (Not all knives in this line have a solid handle.) Furthermore, it stands up to use and abuse, unlike any other knife I've ever had.

I bought mine in a specialty knife store (which has since gone out of business) close to ten years ago. After a nameless family member helped out in the kitchen, it seemed to have disappeared, and I mourned for this little knife. Turns out said family member had accidentally dumped it in the composter, along with a small mountain of vegetable waste. I boiled it and it rejoined the household.

Comfortable to hold, it does a variety of paring tasks well in the kitchen. Slipperiness mentioned in reviews of other knives in this line has not been a problem. Weight and balance are excellent. I like the completeness with which it can be cleaned.

If you have a kitchen or flower garden, you'll find good uses for it outdoors as well. I grow edible ginger, as well as the kind with flowers. For cutting the rhizome from the plant, this can't be beat. I also use it when it's time to thin the heliconias and strip old leaves off lilies.

In perusing reviews about other knives in this line, there appears to be concern about sharpening the Japanese-made steel. I use a Chantry knife sharpener and find it brings this knife back to an acceptable edge.

BOTTOM LINE: If you like the bird's beak style of paring knife, you are likely to find a use for this one. Amazon's price is excellent. I paid about twice the amount and would recommend it even at that price. If you've never tried a bird's beak paring knife, this one is reasonably priced and especially versatile for the reasons mentioned.

The finest paring knife you can aquire
I have been an avid amateur cook for 25 years and have worked with a wide variety of kitchen tools during that period. Knives that I have utilized range from the "cheap but effective" to the finest products from Henckels. But the knives I use daily are the Globals', and the one that I cannot be without is this one. Although it is designated by the manufacturer as a Utility knife, it is simply the best paring knife I have ever used, and I've gone through a lot of them. Its razor sharpness is easily maintained, it has a perfect heft and balance, and it is exactly the "right" size and shape. It just feels great. Sorry if I sound so effusive -- I am not connected with the Global Corporation in any way -- but I would recommend this knife to any serious cook who has exacting standards in kitchenware.
