Great Knife
I bought this knife for boning deer, and it works wonderfully! I particularly like the flexible blade as it makes it easier to cut the meat off of the bone. It is very strong too. This is a high quality knife, and I will purchase more Global knives.

Is Japan Better than Germany?
This knife is by far the best knife I have ever used. As the 'workhorse' of any kitchen this chef's knife is versatile. Both form and function are exquisite. If you can, try out this knife first at your local culinary store... some may not like the feel of the handle.

I cook 3-4 times a week and have not had to sharpen this knife in over one year. The blade is increadible. Make sure that you maintain it with a few swipes on a steel before each use. I have Wustof, Schaff, Henkel (all german), and Sabatier carbon steel (French) and prefer this knife over all of them. That is surprising considering the quality of those knives. This particular knife is part of the Global forged line. I really appreciate the weight and balance of these knives. It would take a little for me to get used to some of their other (lighter)knives, but from what I know, the blade performance in the additional lines is equally unmatched.

Global knives are a bit more expensive than most other brands, but in my opinion their ability in the kitchen makes up for the extra cost. Go for it... you will enjoy your purchase no doubt.

The best knife that I have ever had!
I was given this knife as a birthday gift six months ago. It is absolutely wonderful! Perfectly balanced, sharp, and nice to look at. The fact that it is so well balanced makes it extremely easy to use. Slicing watermelon or cutting sweet potatoes requires hardly any effort any more! All I have to do is let the knife do the work. Chopping vegetables for a tomato sauce is a cinch with this knife. I have a large family and it is not unusual that I have to prepare dinner for 12 to 15 people and this knife has made it easy for me. I intend to get a full set of these knives eventually. In my opinion, there is no comparison to my Sabatier chef's knife.

Traveling Chef says it's the BEST!
I have owned several Global Pro knives before most people in the U.S. had heard of them. I first fell in love with Global Pro shortly after my wife returned from Japan and gave me one as a gift. I love the true balance and feel of the knife...but most mostly the performance of the blade itself. It keeps an incredible edge! They are pricy..but well worth the $. In addition, the customer service is GREAT. As a chef on ships, I accidently dropped it into the ships running garbage disposal when the ship rolled in foul weather,. It cracked the tip off (almost stabbing me when it came out...dumb me) and I wrote to Global Pro of Japan and they replaced the kife at NO CHARGE without a hassel. Why we fell in love with Global
This was our first Global knife, and now we are hooked. It makes cooking a joy due to the ease with which things cut. We've got three other Global knives since, so we use this one less, as it is large, but still a wonderful knife. I assume because of the large size and the need to balance the knife, this is heavier than other Global knives. It now hangs off our Global wall magnet!

Small knife for big hands
This knife has been a revelation to me. I use my 8" and 10" chef's knives for almost everything because small knives are uncomfortable and awkward. Now I know it isn't the small knives I dislike -- it's the small handles!

In the two weeks since I first picked up this one, it has (almost -- let's not get TOO carried away) become my favourite knife. The heft and balance are gorgeous, a completely natural fit in my hand. Of the Henckels handles, I would recommend the five-star style for this knife because the blade is automatically positioned at the best cutting angle.

With a knife like this, I could even see me turning out carrot swans and radish roses: "What's that, dear? When's dinner? Oh, I forgot..."

BEST DARN KNIFE I EVER GOT!!!
Being an amateur cook, I didn't think spending 100+ dollars for a knife is a sound investment. I mean come on it's only a knife! But after my grandmother bought me a set of Henckel's five star, I realized the value of it. I use this for deboning, chopping, dicing and everything else I can get my hands on.

It's sharp enough to do the job but not sharp enough for it to cut your fingers if you accidentally touch the blade. Plus the ergonomic grip is a true blessing since I hate the feel of the traditional knife grips. I think this is the best practical knife out there. (you know those riveted ones.)

If you want SUPERIOR grip (by far the best grip designed) with a sharp full knife, this is the one to get. Affordable compared to its TWIN star cousin.

Forget the food-processor!
Henckels has always produced an excellent product. The 5-star line is their latest innovation. Not only does the high-carbon steel blade take an edge and hold it, but the ergonomically-designed handle is a real bonus. These are worth the price!

Henckels 7-Inch High Carbon Stainless Steel Fillet
Some might find the price to be a bit much when compared to other fillet knives, but believe me, this knife is worth every penny. If properly cared for, another will never be needed. I have been using Henckels knives since 1975 when I began working in a restaurant kitchen. At that time I knew nothing about the difference between knives, type of steel used or anything else. I've learned a lot since then and I am totally sold on Henckels products. I still own the first 8" chef knife that I bought from Henckels in 1975 and it is still as sharp as a razor (a good sharpening steel is a must). I received the 7-inch fillet knife as a gift just over a year ago and it is a tremendous addition to my collection. I now use my fillet knife almost exclusively to fillet fish - I spend a lot of time fishing - and it is important to have a very sharp, but still flexable knife to cut through or around bones as needed. This is especially true for filleting Walleyes, Bass, Northern Pike and Blue Gills. I've used other brands, and I can't really say anything bad about them because they worked. Perhaps for a novice, a shorter blade might be better to start with. But for my money, this knife is by far the best I have used and I prefer it over all others.
