Form over functionIf you are expecting to use the knives to actually cut steak, look elsewhere. The blades are not particularly sharp - they rely on the sawing action of the serrations. If you don't have firm grip on your fork these knives will just drag your steak around the plate. The knives don't cut, the RIP through the meat. The small serrations quickly become clogged and any semblance of cutting disappears.
My wife has some steak knives she got years ago as a premium for buying a full tank of gasoline... these knives, with a few strokes on a good stone, will cut a 1 inch steak in a single pass - something you could NEVER accomplish with the Henckels.

Henckels Steak Knives kick a__Apparently all the engineers started working for NASA, and nobody stayed around working the "consumer applicance bit". When I first came to America in 1989, and stepped inside a SEARS appliance store, I was totally in shock. What are these "spiral-type" electric cook-elements I kept asking myself ? These appliances looked and function like 1950 models in Europe ! No smooth cooktops, no SILENT / QUIET dishwashers, no convection wall ovens, no washer and dryer in-one combinations, no front-loading washers. With other words the total appliance DESERT !
Now I am coming to the point. I am building a house right now. All the (european type)applicances I like to have, I have to buy through some major (almost black-market) type deal, because what is mainstream in Europe is NOT mainstream / very hard to come by and is always called GOURMET in the US.
THE SAME is true for cookware (e.g pots and pans, silverware, knives AND Steak knives. Nothing cuts around here :-) except some European designed knives. Apparently, it is very hard to find stainless steal cookware (pots and pans) in the US with tempered glass lids, an itemn that has been standard in Europe for 15 years, why is that ? To get back to the steak knives, we owned these for several years, they are great, fit good to our other Sambonet (Italian styled silverware) and really do cut, without the UGLY woodenhandles and "chromed" plates. I can't even find a decent corkscrew in this country ! This is really pittyful, BUT on the other hand the land and the houses are cheaper :-)
"Come on America", get to work and clean up this mess in your appliance, kitchenware and knive offerings, I know you can do it ! You went to the moon for crying out loud, why can't you design us some decent 21st century style appliances, pots & pans, AND KNIVES ?
Until this day will come I HAVE TO RECOMMEND, brands like BOSCH, Miele, Krups, WMF and these steak knives from Henckels or Zwilling as they are called in my native Germany. There is nothing better in this country in this segment, but these knives. Believe me, I have done the research ! I own 16 of those(you know when friends stop by for some steak dinner) If I were you, buy as many as you can, while they still exist ! Fact: The best beef is in America, that's why I am here too, but I have to cut the american beef with German knives for the time being. :-)

Great for a startDo a little searching on the Internet; you will find plenty of tutorials on how to hone your knives, how to sharpen them, and how to use them correctly. I had never really used good knives before, and now I actually look like I know what I'm doing. These knives wipe clean easily; don't ruin your investment by putting them in the dishwasher.
Incidentally, I thought I would never use the utility scissors, and I find myself using them all the time.

Pretty Knife, but the Henckels Pro S was more functionalThe Henckels is called: Henckels Pro S 7" Santoku Knife - Granton Edge.
A beauty in form and function, but will the handle slip?The only drawback to this knife -- as it is with competitors' steel-handle knives, is that most cooks will not feel as secure holding it, particular if your hands are a little slippery or greasy. It just feels as if it might slip. For that reason, I think the Wusthof Grand Prix version of this knife would be a slightly better choice. But hey, if you have a zillion-dollar kitchen and a zillion knives, this series is the prettiest to display that you'll find anywhere.

Not the knife I was expectingThe small size of the blade and smaller grip handle also feels limiting for quick chopping and dicing. I have been unable to get that great rocking action that I enjoy when I really get a knife going.
Actually, the size of the knife makes this a perfect utility knife, and that has become my use for it. For a chef's knife I prefer a higher performance knife that allows me to speed through my cutting and slicing quickly and effortlessly. If you are looking for performance, this isn't the knife for you; however, if you need a good utility knife with a bacteria-resistant surface that holds an edge nicely, I would definitely recommend this knife.

It's almost impossible to sharpen Global serrated knives
Good but unnecessaryI like being able to sharpen my knives frequently and this isn't very easy to do with serrated knives. A special tool and technique is required and the whole process is very time consuming. In addition, make sure that you use a ceramic sharpener on all global knives. Its supposed to have a different grit that is better for them. Kyocera (ceramic knife manufacturer) makes one specifically for Global but they are quite expensive.

Not Perfect But Nice for the PriceSo, the knives are dirty and scratched as I mentioned. I cleaned them via a good hand washing and that took care of the dirt and some of the minor scratches.
Now I notice the knives are not uniform. The handles are not joined perfectly as I'd expect from French made Sabatier knives.
On the bright side these knives are pretty much the same Laguiole style steak knives you'll see in top restraunts. They are the sharpest steak knives I've seen and except for some minor defects are quite nice visually.
I ate at Boulevard in San Francisco a couple nights ago and I noticed they use very similar knives which were in much worse shape than the set I got so cheaply at Amazon. So, I figure these knives with a few scratches are probably good enough for my table... will give this deal four stars.
Excellent Bargain
I like them
Due to the damaged handles I returned this set to Amazon via their easy return system. My opinion is these are okay knives, but you might as well spend a few dollars more for a brand like Wusthof. You will not get such a large assortment of cutlery for the same price with Wushtof, but the quality and finish will be impeccable.
