Excellent knife, and a perfect fitI quickly settled on the 4-star chef's and fillet knives, but tried paring knife after paring knife without finding one that really felt right. The 4-star handle is great on the big knives (where one grips the handle with the entire hand), but didn't feel right on the paring knife; it felt like my pinky was in limbo, not meant to be on the handle, but not meant to be off it, either.
Then I tried THIS knife. The Pro-S 3" paring knife just felt *right* - it fit perfectly, it had just the right heft, and it was far more agile than the longer 4" knives. I've had it for six months and it performs exactly as I expected it to; this knife is just a joy to use.
I love the thing, but you'll probably want to do exactly as I did, trying a number of high-quality knives to find the one that feels right to you.

My fiancé is jealous. After each meal, I hand-wash these instruments and give them a quick touch of the sharpening stone. I then gently, very gently, place them back into their case for safekeeping. Is it any wonder my fiancĂ© is jealous?
I do have one complaint -- I only have four of these knives. I'm going to need at least eight more for the grilling I plan to do next summer. I mean, it's going to take a big patio party to properly show off these fine blades.

Henckels Twin Star Knives
- Full visible tang, proper balance and strength and added weight
- SCT (sinter metal component) technology
- FRIODUR ice hardened process
- Precision honed blades, super bolster
- Serrated 9" blade is longer and has a wider blade for use on any sized loaf
List price: $96.00 (that's 22% off!)

The best for thick crusts
9#1 The country knife has a slightly curved blade as compared to the straight edge of the regular bread knife
#2 The country is 1" longer (duh)
And the winner is . . . 8" Regular. The reason? They are both made by Henckels and both are top of the line. Unless there is a real need for an extra inch of cutting surface and slight curve to the blade for a couple of bucks more(and so far I can only see that holding a bigger knife is more spectacular), go for the 8" regular unless you really believe that bigger is better.

Excellent knifeThe first thing I noticed was the wood handle -- I much prefer wood to the newer rubbery handles. Also, the heavy back-weighting made it feel quite steady in my hand: I liked the balance. The blade itself is sturdy, shaped like a small version of a chef's knife. And -boy!- is it sharp! This makes trimming small cuts of meat and vegetables very easy. I highly recommend this knife.
An excellent tool
